Has anyone used the GM performance head gaskets on a racing motor, are they any good. They are about 40% the cost of the popular brand names out there...

Look up Ferrea's. The offer quite a few SBC gaskets in 4.065", 4.125" and 4.150" bore and between .035" - .045" thickness. And, they're about 1/2 the price of Felpros. I used them this year and they seem to be holding up well. I still have a set of 1004 Felpros as a backup, but will probably be using Ferrea's from now on. Just make sure to look up the Comp. gaskets and not the Hi Perf one.

For thin gaskets - I've used the Mr.Gasket steel shim ones - they're about $20-22 or so.

are they coated or do you need to put some sealer on them

The ones from gm performance are not coated. I would go to the auto parts and buy a can of copper head gasket spray and coat them myself.

I don't recall - I recall them looking dark grey so I'm thinking they had a graphite coating on them, but can't guarantee it. I've always had a can of the copper gasket coating laying around so I may have used it...

I think they were these:

here's the other ones and they look like plain steel..
