do you have a high volume high pressure pump if so you could be sucking all the oil of the bottom and putting it up on top of the motor.

A few years ago we had a new motor do the same thing. We broke it in fine and it would idle about 70-80# cold and 30-40 hot. Everthing was fine until it hit the track and after a few laps oil pressure dropped and it started spitting oil out of the valve covers. Bring it in to pit restart and idle about 60#. After a week or two of fighting it we found out the problem was a crack in the block and 1 set of rings never seated so when running it hard, blowby in that cylinder was building pressure in the crankcase and oil would not drain back.

Hope this helps, I know it was aggravating for us.

You may want to check the oil filter also, I have had some brands (Fram) suck the element in and cause the pressure to drop.
