i run a street stock with a 358ci with 2 barrel. i bought a stewart stage 1 pump, aluminum radiator(new),28-32 psi cap(new),1 to 1 pulleys, no restrictor, 6 blade fan, and good shroud..
heres the problem... when im racing the car its gets to about 190/200 degrees and it starts to blow water past the radiator cap... then it proceeds to climb in tempature up to 240+... now the car can idle forever w/o getting over 180.. ive tried a different cap and same thing happens... any sugestions?? i think maybe a blown head gasket?? or cracked head??

start it up cold full of coolant and look for air bubbles in the filler neck.

check your hoses to make sure they aren't sucking shut.

you can try to use a 4 blade fan and slow that water pump down that might help

Head Gasket. Compression test may not show it, if the compression only passes into the water jacket when the motor is hot. Try the leak down.
