I keep reading about this person or that person having so many #'s of bite. How is this determined? This forum is GREAT for getting info on just about everything! Thanks in advance for ya'lls help.

ToO figure the #'s of rear bite you have, take the RR weight and subtract it from the LR, this will give you the #'s of bite you have.
To much LR bite with produce a throttle push, you need to find that when it throttle pushes and then back off some.

What would be a a good # for rear bite. I have never worked with it as far as an actual number goes. Or is just something you have to keep adding / subtracting till the car feels right?

Depending on how you are entering the corner it will also make you lose on entry as you add too much bite. You need to find a balance.
