Am thinking about making a scatter sheild for a 2.2 dodge, what thickness metal should I use? I have access to 7 guage hot rolled(between 3/16 and 1/4).

use the thickness you want to remember it's there to protect you so it's your safety you should have in mind.

I'd go as thick as I felt safe, extra weight on the front of a fwd is almost always good.

A piece of conveyer belt from the rock quarry works pretty good.
