I have a set of 23 degree Lunati flat top pistons that are for a 5.7 rod 3.48 stroke 30 over 350. Is it possible to use these with a NON 23 degree head?

if they are flat top, there is a slight possibility that you may be able to use them with other valve angle heads. BUT, there is only one way to find out and that is to mock the engine up.
most 18/16/15/14/12deg & SB2 style heads run much larger valves which can become the problem as the edge of the valve protrudes further into the combustion chamber. Also most of these style heads produce alot more top end power requiring increased camshaft lift &/or rocker ratio which could be the cause of problems.
But yes, there are many engines with straighter valve angle heads running with flat top pistons.
