Or a big ol' air pocket. Is the fill (cap) at the highest point in the cooling system?

What is the temp at the point you remove the cap? If it has any water temp, the water will push out because the pump and water expansion will expand the hoses and when you open the cap, the water is forced out by the contracting hoses. Could be what the other guy's said also, but you donb't want to open the cap when the motor is running and there's any water temp in the engine.

Ruyn the engine with the cap until good and warm you will see the water level rise and fall. Try to keep the filling the rad. Run a catch can and you can get it completely full. Set it up as coolant recovery system. Works for us

Are you running a t-stat? Most likely air pocket if you are.
