I got a 358 chevy all cast. The motor does not seem to run realy strong till the temp hits 210 it stay at 210 is this ok. I even change gauges to make sure accurte temp.

210 is fine, that wont hurt anything. Don't let it get much higher than that though.

210 is in the range of peak horsepower. Cold motors do not make horsepower.

for a stock sbc what is the hottest it should run? At what temp should you pull off the track?

I work for a machine shop in texas .We dino motor's at 185*they make thier most power in this range.things change when you get the motor under the hood.Heat is traped the headers produce heat at around 1200 to 1300 deg.Some cars run well at 220+ but most don't with the cooling sytem's working well the car should come off no more than 200 deg.Mine never get's over 200.my buddy's car same motor same radiator different water pump run's 210# .I have fond that if you run a good alum pump and a good alum radiator.Make sure you have a good shroud that seal's the radiator and dont make a big square shroud.it needs too funnel down to the fan and run a 6 blade steel fan.it is worth the wieght too cool the motor.And make sure your motor is lower than the radiator.If it is not put a filler neck on the manifold.18/23# CAP
