I had someone tell me that if you want about 75-80 PSI Oil pressure at Idle cold, and about 50-55 Hot, you could push the pin out of the oil pump, and get a backing washer from a pop rivot, cut it to fit, and put it between the pin and the spring to increase pressure some.

That only works if the clearances in your engine are tight enough to open the bypass in the pump. If the clearances in the engine are too loose and leak too much oil then it doesnt matter, you would need to push more oil into the engine(high volume pump) to make up for the leaks in order to increase pressure. You can get 75-80 cold without shimming the spring and you dont really need 50-55 hot at idle anyway. Theres no need running more oil pressure than necessary because it is just wasted power.

I use the old rule, 10 pounds for every 1,000 rpms. Naturally this doesn't apply at low rpms, just on the big end.

the left over buttons from the cam degree kit work great for shimming the spring. In the old days I use a stock big block pump for the high volume but needed to boost the pressure. Pull out the pin holding the spring, install a cam degree button put pin back........adds about 25psi
