I was wondering stock 350pistons,400 stroke crank,400 stock length rods and a 350 block. How much will this miss the deck height?

That combination should be the about the the same as the stock deck highth was. I think it will actually put the piston .003 lower in the bore than before if I've done my math correctly.

1/2 of the stroke of the crank, 4.00" stroke, use 2.00".

The rod length, in your case 5.70"

Plus the compression height of the piston, compression height the distance between the top of the piston to the centerline of the wrist pin bore, or pin.

You can find the compression heights of 350's and 400's on the web, dont know them off hand.

Add all 3 up, and subtract it from your deck height. Deck height is the distance from the cranks centerline, to the top of the bore (head gasket surface).

Stock 350, and 400's are 9.025"

400 stroke is 3.75"
400 Rod Length is 5.565"
Pin height on 350/400 is 1.560"

Thanks Krom for explaining my math. Been out all evening putting an engine together and just got in and checked the forum.
Only difference in my figuring and yours is that I use 9.003 as the stock deck height. Not enough difference to matter IMO.
