Does anyone know what parts will and will not exchange between demon and holley carbs?

I know gaskets and power valves will, what about floats? pump arms? throttle plates, shafts. etc.

I love the demon but barry grant parts not as common or as inexpensive as Holley.

Demon carbs have many parts that are virtually identical.
The bowls and blocks are the most different from the Holley's, as well as booster designs, and I believe some details of the baseplates.
I've not tried swapping shafts, but all small parts (squirters, power valves, etc) are interchangeable.
Assuming the shaft lengths match up, as well as diameters, then there's no reason they wouldn't be interchangeable too.
As for pump arms, there may only be a need for a small geometry alteration (read as: bend with pliers) to the arm's foot angle that rides on the pump cam.

You want to make sure you match up ALL the holes on the throttle plate gasket. I have had some holley ones that missed on one hole.
